This recipe is inspired by the Peach Breakfast Shake from Amy Chaplin's book - At Home in The Whole Food Kitchen. Make sure the peach you are using is really ripe and juicy. A sweet, ripe mango will also work well here.
This makes for a nice and light breakfast option on a hot sunny day, or an easy to digest evening snack when dinner is still hours ahead.
Ingredients:
2 tbsp ground chia seeds
1 tbsp ground flaxseed
3/4 cup almond milk or other plant milk of choice
1 tsp - 1 tbsp rose water
1 tbsp hemp seeds or 1-2 scoops collagen powder (optional)
1 small peach or half a mango (make sure the fruit is really sweet or juicy) - pureed or chopped very finely
Method:
Mix the ground chia seeds, ground flaxseed, almond milk and rose water together in a small bowl or jar. Leave to sit for about 5-10 minutes until the mixture thickens.
Add the hemp seeds or collagen powder if using and layer the pureed peach or mango on top. Sweeten with a bit of maple syrup if you find it not sweet enough.
